Rollin’: Now refrigerate the belly until its texture changes from soft to firm but still pliable. Over the course of seven to 10 days, flip the belly every other day. Once cured, the pancetta could be rinsed and cooked as is, but I take it a step further, rolling and drying it to develop a firmer texture and deeper flavor. Arrange the rinsed pancetta meaty side up, long side facing you. Sprinkle it with some coarsely ground pepper, then, starting with the side closest to you, roll the pancetta as tightly as possible. You want to avoid air pockets in the center (the ends may stay slightly open even if the center is tight).
